Something else to do with Bourbon

So, we have this big thing of Makers Mark in the liquor cabinet and it never gets used. So, I was thinking of a time when my sister and friend, both who are bartenders made this great drink with the leftovers in the bar. It was great, refreshing and what a kick!

1 1/2 oz makers mark
1 oz chambord
lemonaid

Pour over ice and enjoy. You can add a little club soda if it is too sweet.

Honey Chipotle Salmon

2 Salmon Filets, 4-6 oz each
2-3 chipotle peppers from a can, minced (in adobo sauce)
Honey, to taste
Orange juice
Olive Oil
Garlic
salt and pepper

Combine last ingredients 6 ingredients with a wisk. Wisk in the olive oil last to thicken the glaze. You want to use a good amount of honey, you can also use surgar, just be sure it all disolves before glazing salmon. This is kind of a take on sweet and hot. You want to be able to taste the heat, then follow up with the sweet. Salmon is the perfect canvas!

Not an Exact Science

As you can probably tell from my recipes, I am not one to measure. I go by how it tastes. Using your hands and fingers are your best tools. Pinch your spices, salt and pepper, etc. and use your palm to measure larger amounts. You will soon get the feel.

Cinco De Mayo

Ok, so a quick easy Taco Salad recipe in honor of Cinco de Mayo, sorry no pics of this one, but trust me it is delectable.

Ground Beef, Chicken, Pork or Shredded chicken seasoned with taco seasoning, follow instructions on box.
Lettuce of choice - I like field greens with anything, or Mesclun mix.
Kidney Beans
Red Onion
Cilantro
Cheddar Cheese
Tomatoes, chopped
Crack Chips (that is code for tortilla chips with a hint of lime, they are "Crack Chips" because they are like crack, you can't stop eating them.
Fresh Pineapple

Just arrange on plate to your liking, as little or as much of each ingredient you like. then take bottled ranch dressing and add lime juice some cilantro, chipotle chile powder and a little cayenne pepper and you have yourself a delicious chipotle ranch dressing.

Enjoy with a margarita and you are golden!!

Starting things out right...Ginger Spiked Watermellow Margarita


Margaritas of any flavor rock! but this one really brings the house down. Make a large batch because you won't be able to have just one. Jumbo size tequilla $36, Large Watermellon $6, delicious, refreshing, unique tasting Watermellon Margarita $$$ Priceless!



Ginger spiked Watermellon Margs -


Half of one large watermellon or 1 whole small watermellon

Ginger simple syrup - recipe to follow

1/2 cup fresh squeezed lime juice more or less to taste

2 to 1 ratio of tequilla to triple sec.


You can make an entire batch or just one or two drinks at a time. What I like to do is make a big batch of the watermellow juice and then mix it with the tequilla and triple sec seperately.


Cut the watermellon into cubes and place in a food processor or blender. Add the lime juice, and the ginger syrup and puree.


Ginger Syrup -

1 cup sugar

1 cup water

10-12 slices of peeled ginger


bring to a slow simmer and cook for about 5-10 minutes, depending on how strong you want the flavor.
